Gooey CBD Brownies Recipe

This recipe uses a 26cm by 20cm baking tray and makes around 15 square brownies.

  • 300g dark chocolate
  • 150g butter (plus a little extra for greasing the tray)
  • 350g brown sugar
  • 4 eggs
  • 120g plain flour
  • 2 teaspoons vanilla extract
  • 2 tablespoons cocoa powder
  • 30 drops of Professor Herb's 1000mg CBD Oil
  • 2 tablespoons mayonnaise (yes – really! Please see FAQs below)

Method

Combine 300g dark chocolate and 150g butter and gently melt. You can do this by heating a saucepan full of boiling water, and then sitting the bowl of chocolate and butter on top of the saucepan – the steam from the hot water will melt the chocolate. Make sure to stir continually while the chocolate melts and only keep heat on medium to low to avoid the mixture becoming too hot.

Once melted, remove the bowl from the saucepan and allow to cool slightly. But not so much that the mixture hardens

Whisk the 4 eggs with a fork to combine yolk and egg whites and then add to the cooled chocolate and butter mixture. Stir until combined.

Sift together the flour, brown sugar and cocoa powder and then add to the chocolate, butter and egg mixture until combined.

Add 30 drops of Professor Herb 1000mg CBD oil. (This provides approximately 2 drops of CBD /3.2mg of CBD per brownie. You can experiment with different oil concentrations and number of drops if you like!)

Add the vanilla extract and the mayonnaise and stir until combined. (Trust us on the mayo! It's only oil & eggs combined, and makes these brownies EXTRA gooey)

Grease a 26cm by 20cm baking tray and gently pour in the brownie mixture. This will make around 15 fairly thick square brownies. (It’s okay to use a larger tray, however you’ll need to bear in mind that the cooking time will need to be lowered as the brownies will not be as thick.)

Cook at 180° Celsius / 356° Fahrenheit / Gas mark 4 for 20 mins. Remove brownies after 20 mins and cover the tray with tinfoil. (This stops the top of the brownies from burning and becoming too chewy.)

Return brownies to oven and cook for a further 20 minutes. Insert a toothpick or sharp knife into the centre of the brownies. There should be a little wet batter clinging to the toothpick or knife, but they should both come out clean when inserted into the edges of the brownie tray.

Wait until cooled completely to cut into squares or rectangles!

Serve and enjoy your gooey CBD brownies.
